Bulletproof Macaroons

I wanted to make a batch of a snack food that was delicious and very healthy.  And of course is needed to be satisfying in both nutrient content and flavours and texture.  I was craving chewy and chocolate.  I have a big bag of very high quality sun dried, raw, coconut right now so I decided to make some macaroons.

But there couldn’t be white sugar infested, insulin assaulting, Starbucks style, macaroons.  No they needed to be Upgraded and Bulletproof.  Enter the secret ingredients:

Now, I want to quickly insert a point here.  As an endurance athlete I am very familiar with Whey Protein as it is an ideal source of protein post exercise (rapidly absorbed and very high bioavailability), so naturally I have tried various products.  After going through my first bag of Upgraded Whey, I can 100% honestly tell you your body will feel the difference and you can just sense it when you consume this stuff.  Not only does it actually taste way better but there is 0 chance of bloating, gas or any unwanted (and common to most brands) after effects.  Unless you have a sever dairy sensitivity I would strongly recommend you try this whey.

OK, back to the macaroons.

I checked out a few different recipes online, got the gist for the approximate ratios of egg whites / coconut / cocoa power and made up my own version.  Here’s the recipe.

Ingredients

3 cup shredded coconut

1 cup Upgraded Whey Protein

1/3 cup cocoa powder

5 egg whites

1/2 cup almond butter

1/2 cup Upgraded MCT Oil

1/4 tsp salt

1/4 tsp almond extract OR 1/2 tsp vanilla extract

1/4 cup Maple Syrup (optional)

-Preheat oven to 325

-In a big bowl mix the dry ingredients (not the salt though).  Mix them real well with a big whisk as the whey and cocoa will coat the coconut.

-In another bowl whip the egg whites and the salt with an electric mixer until peaks form, this may take up to 3 or 4 minutes.

-To the egg whites add: almond butter, MCT Oil, extract of choice and the maple syrup if you are using it. Mix these wet ingredients up well with the whisk.

-Dump the wet into the dry and mix well with a big ‘ol wooden spoon.

-Form small balls to a size of your choice (3/4 -1.5″ diameter is best for baking time), place them on greased cookie sheet (use butter for greasing. … . butter is always better) about 2″ apart. Once they are all on the sheet(s) take a spoon (keep wetting it to avoid sticking) and use the back side to flatten the macaroons a bit if you want, or do what you want and shape them all fancy like in the stores.

-Bake 12-15min. I took one out at 12 minutes and checked it, by eating it, to see if it was done. Just depends on oven.

Additional Notes

Try to use highest quality for all ingredients – unsweetened coconut, good organic cocoa with clean processing methods used, free range eggs of course, organic almond butter, and if you use the maple syrup obviously we are talking the real stuff.

So, now you have a 1 or 2 or 3 bite snack that is loaded with healthy fats and protein to keep you full, feeling great and ready to take on anything thanks to Upgraded products.
